金莓月餅食譜作法

金苺月餅 

一、食材:(80)

1.油皮(15g/):中筋麵粉600g、代糖95g、鹽2g、橄欖油225g

                                 水 350g

2.油酥(10g/):低筋麵粉500g、橄欖油200g、南瓜皮40g

3.餡料(35g/):南瓜餡500g、玉米粉100g、代糖5g、細砂糖20g

                                南瓜籽60g、蔓越莓100g

二、作法:

1.油皮:中筋麵粉、代糖、鹽加在一起攪拌均勻,先加70~80%的水量

           攪打成糰後再將剩餘的水量加入拌勻,將麵糰攤平用保鮮膜封起來

           放在室溫(25)下或冰箱中醒15~30分鍾。

2.油酥:先將南瓜皮切細用150溫度烘烤(要不斷翻動),再與低筋麵

               粉、橄欖油攪拌成糰。

3.餡料:南瓜餡、玉米粉、代糖加在一起拌勻,再加入南瓜籽及蔓越莓

              打成糰,捏成丸狀(35g)備用

4.將油皮包油酥後桿平,捲起再桿平共2次後,捲起放著再醒10分鍾

5.將醒過的皮再桿平,並將南瓜餡料包於皮內。

6.烤箱上火210 /下火190 ,烤18-19分鐘,至外皮酥脆即可。
